Power Tacos
Finding healthy foods that your family, spouse (or even yourself!) will eat can be a challenge. This is the ideal recipe for those of us who want to eat well, but also just get hungry for our favorite meals - like tacos! Power Tacos are one of my go-to recipes, because it uses familiar favorites, like ground beef, but sneaks in a few healthy additions like greens, onions and tomatoes.
Be a sneaky chef
When introducing recipes like Power Tacos, chop up the veggies as small as possible. It makes for a more familiar look and consistency when serving it to picky eaters. If your crowd isn’t ready for the full recipe, try adding in one new item at a time - just the greens, or just the onions. The goal is to squeeze in more vegetables to the meal, so whatever works for you and your eaters is best!
Ingredients
1 lb. ground beef
2 cups chopped spinach, kale or Swiss Chard
1/2 cup green onions, sliced
1 can black beans, rinsed and drained
1/2 cup salsa
Taco seasoning to tase
Taco shells
Cheddar cheese
2 cups lettuce, chopped
In a large skillet, brown the ground beef along with the spinach or other greens, and onions. The greens will shrink up a lot when they are cooked. When the beef is nearly browned, add in the beans, taco seasonings and salsa. I skips the water that is usually recommended with taco seasoning, and use salsa or taco sauce in its place. This adds more flavor, and more veggies to the dish. Serve immediately with lettuce, cheese and shells.
